Relish aus Gurke
- 400 g Gewürzgurke pealed, halved and cut in pieces
- 2 Äpfel peeled, cored and diced
- 1 small Zwiebel finely diced
- 125 g Rosinen
- ground Gewürznelken
- ½ TL schwarzer Pfeffer
- 1 TL Ingwer grated
- 1 Knoblauchzehe crushed
- 1 TL Salz
- 250 ml red Weinessig
- 175 ml Zucker
1 Mix together the cucumber, apples, onion, raisins, spices, ginger, garlic and the salt in a pot. Cover and heat on a low temperature for 45 min stirring occasionally so that nothing sticks to the bottom.
2 Add the vinegar and simmer, stirring occasionally, until the mixture takes on a jam-like consistency. Stir in the sugar, season to taste, bring to the boil and then pour into sterilised jars. Close well and turn upside down to cool.
Goes well with fried fish, cold or pan-fried meat.
